slow learner

I've decided I love the Crock Pot. It may be my new best friend. For a non-cook like me, it's about the easiest way to whip up a hot and tasty meal. And let's face it, it's not exactly rocket science...the recipes are pretty simple (mostly involving some minimal chopping, opening, and pouring), the measurements don't have to be too precise, and there are no fancy "Top Chef" type instructions to follow.

This past weekend we invited both sets of parents/grandparents over to celebrate their birthdays, most of which fall within a couple weeks of each other in October. I decided to try out this recipe from my friend Katie, and I think everyone was pleasantly surprised!

Slow Cooked Ribs

1 package (about 2.5 lbs) HEB country style boneless pork ribs
(these are pre-seasoned but if you can't find them or don't have an HEB nearby, Katie tells me you can buy plain ribs and season them yourself with some kind of dry rub...thank heavens I didn't have to try that!)
1 bottle Sweet Baby Ray's BBQ sauce
1 red onion, sliced
1 orange, peeled & sliced
1/4 of a beer

Put the ribs in the broiler for 5-10 minutes on each side to drain fat. Place the ribs and some of the onions in the Crock Pot. Mix BBQ sauce and beer. Pour sauce/beer mixture over the ribs and top with remaining onions and oranges. Cook on low heat 8 hours.

I actually made 2 batches which was enough to feed 6 adults and 2 children, but barely.
